Slow Cooker Carnitas

  1. Place pork in slow cooker.
  2. Season pork with salt, pepper, oregano, and chipotle pepper.
  3. Place onion on top and pour beer into slow cooker.
  4. Cook on low setting for 6-8 hours, until meat is tender and pulls apart easily.
  5. Shred pork with fork.
  6. Warm tortillas either by cooking on medium high heat on the stove top for 3 minutes each side or by covering with a damp paper towel and heating them in the microwave for 1 minute.
  7. Assemble carnitas by placing shredded pork, avocado, and tomatillo salsa in tortilla.
  8. Add hot sauce and/or sour cream if desired.
