Bayou Boeuf Jambalaya Recipe
- 1 Tbsp. Shortening
- 1/4 lb Kosher salami, cubed
- 1 sprg thyme
- 1 x Onion, sliced Salt & Pepper to taste
- 2 c. Tomatoes
- 1 c. Uncooked long grain rice
- 1 Tbsp. Flour
- 1/4 c. Green pepper, chopped
- 1 x Bay leaf
- 1 sprg parsley, chopped
- 1 x Clove garlic, chopped
- 1 lb Kosher smoked sausage.
- 1 1/4 c. Tomato juice
- Heat shortening in heavy saucepan over medium heat.
- Stir in flour, salami, and green pepper.
- Simmer 5 minutes, stirring constantly.
- Add in remaining ingredients except rice.
- Bring to boil.
- Add in rice to liquid.
- Cover and simmer for 40 minutes.
- till all liquid is absorbed.
