Cowboy Bean Casserole
- 1 cup diced ham
- 2 tbsp. margarine
- butter
- 1 clover garlic, minced
- 1 can (1-1/4 lb.) baked beans
- 1 can (1-1/4 lb.) red kidney beans
- 1 can (14 oz.) lima beans, drained
- 1 tbsp. brown sugar
- 1 tbsp. mustard with horseradish
- 1/2 cup catsup
- 3 tbsp. vinegar
- Salt and pepper to taste
- 1 md. onion, sliced
- Saute ham in butter or margarine.
- Combine garlic, beans, ham, mustard, sugar, catsup, vinegar and seasonings.
- Pour into a greased casserole and top with onion slices.
- Cover and bake at 350 F. for 50 minutes.
- Makes 6 servings.
