Super Tasty Italian Sausage Subs
- 1 tablespoon olive oil
- 2 Italian sausages (I used Becco's sausage which is locally made)
- 1 medium onion, sliced thin
- 1 red bell pepper, sliced thin
- 4 slices provolone cheese
- 2 sub rolls
- 4 tablespoons sun-dried tomato pesto
- Heat olive oil in frying pan.
- Saute onion and pepper until onion is transparent and softened.
- Remove vegetables to a plate and set them aside.
- Add sausages to pan and fry on medium heat, turning from time to time, until sausages are no longer pink and are almost fully cooked.
- Return vegetables to pan with sausage and cook together until sausage is fully cooked.
- Meanwhile, spread 2 Tbs.
- of the pesto on to each sub roll and top with provolone cheese.
- Place a hot sausage in sub roll and top with onions and peppers.
