Zucchini (apple?) Pie
- 1 double crust pie crust
- 3 -4 average-sized zucchini
- 1 cup white sugar
- 14 cup brown sugar
- 1 teaspoon cinnamon
- 14 teaspoon nutmeg
- 14 teaspoon allspice
- 14 teaspoon salt
- 1 12 teaspoons cream of tartar
- 2 tablespoons flour or 2 tablespoons cornstarch
- Peel, deseed and cut zuchini into pieces.
- (Same as you would for apple pie).
- Cover with water, bring to boil for about 2 minutes.
- Drain and set aside to cool.
- Mix together the rest of the remaining ingredients.
- Mix gently with the drained zuchini.
- Put all into pie-crust lined pan, and top with second crust.
- Bake at 400 for 10 minutes, then reduce heat to 350 and continue baking for an additional 20 minutes, or until golden brown.
- Serve with vanilla ice cream, if desired.
