Barley, Corn, Red Pepper, And Green Onion Pilaf Recipe
- 1 Tbsp. extra virgin olive oil
- 1 lrg red bell pepper minced
- 2 bn green onions minced
- 1 1/2 c. pearl barley
- 14 1/2 ounce low sodium chicken broth or possibly veggie broth
- 14 1/2 ounce water
- 2 c. frzn corn
- 1/2 c. fresh basil sliced
- Heat oil in heavy medium saucepan over medium-high heat.
- Add in minced bell pepper and half of green onions and saute/fry till tender, about 5 min.
- Add in barley and stir to coat with extra virgin olive oil.
- Add in broth and water and bring to boil, stirring occasionally.
- Reduce heat, cover and simmer till barley is tender, stirring occasionally, about 40 min.
- Add in corn and stir till heated through, about 5 min.
- Fold in sliced basil and remaining green onions.
