Bengali Chicken Stew

  1. Rinse chicken and pat dry thoroughly.
  2. In a large saucepan, heat 2 tbsp (25 mL) of the oil over medium heat.
  3. Brown chicken, in 2 batches, 6 to 8 minutes per batch.
  4. Remove with tongs and set aside.
  5. Remove from heat.
  6. Scrape up any bits and pieces that may be stuck to the pan and add to chicken.
  7. Add remaining oil to pan and heat over medium-high heat.
  8. Add panch phoran.
  9. When the seeds stop popping, in a few seconds, reduce heat to medium.
  10. Immediately add bay leaves, ginger, garlic and tomatoes and stir to mix.
  11. Add coriander, cumin and turmeric and saute for 1 minute.
  12. Add 4 cups (1 L) water.
  13. Increase heat to medium-high.
  14. Add chicken, making sure all pieces are submerged.
  15. Add salt.
  16. Cover and bring to a boil.
  17. Reduce heat to low and simmer for 35 minutes.
  18. Add potatoes and cauliflower.
  19. Cook, stirring occasionally, until vegetables are tender and chicken is no longer pink inside, 12 to 14 minutes.
