Hoppin' John

  1. Rinse and sort peas.
  2. Soak in 3 cups of water overnight.
  3. Strain and rinse in the morning.
  4. Place in crock pot along with the rest of the ingredients.
  5. If you are in a hurry, cook on high for 3 hours.
  6. Or you can cook for 6-8 on Low.
  7. Take out the ham hock, and cut away the meat, discarding the fatty parts, and the bone.
  8. Replace meat into crock pot.
  9. Stir.
  10. Serve.
