Veggie Bulgur Salad

  1. From lemon, grate 1 teaspoon peel and squeeze 3 tablespoons juice.
  2. In microwave-safe 2-quart bowl, combine lemon peel, bulgur, water, and salt.
  3. Cover with vented plastic wrap and cook in microwave on High 3 minutes.
  4. Remove from microwave and let stand until all liquid is absorbed and bulgur is tender, 5 to 10 minutes
  5. In large bowl, toss bulgur mixture with lemon juice, tomatoes, cucumber, parsley, mint, olive oil, and pepper.
  6. Serve at room temperature, or cover and refrigerate up to 2 days.
  7. Makes about 4 1/2 cups.
