Basil Slice and Bake Crackers

  1. In a medium sized bowl whisk together flour, peppers and salt.
  2. Stir in cheese.
  3. Set aside.
  4. Cream the butter and cream cheese in the bowl of a stand mixer.
  5. Then add pesto and mix until combined.
  6. Add flour mixture in batches and mix until incorporated.
  7. Stir in nuts and chopped basil.
  8. Transfer half of the dough to a large piece of plastic wrap.
  9. Wrap the plastic around the dough and roll on a flat surface until it is a cylinder, about 1 1/2 inch diameter.
  10. Repeat with remaining section of dough.
  11. Place the plastic wrapped dough in a Ziploc bag and chill until ready to bake.
  12. You can freeze if not using right away.
  13. When ready to bake, preheat the oven to 350 F.
  14. Slice the logs into 1/4 inch crackers and place on an ungreased cookie sheet.
  15. Bake for 18 to 20 minutes, or until slightly gold around the edges.
  16. Cool on a rack.
  17. Makes about 6 dozen.
