Mashed Potato Casserole

  1. Place potato in a saucepan; add water to cover, and bring to a boil.
  2. Cover, reduce heat, and simmer 20 minutes or until very tender; drain.
  3. Combine potato, cream cheese, and next 3 ingredients in a bowl; beat at medium speed of an electric mixer 2 minutes or until smooth.
  4. Spoon into an 11x7x2-inch baking dish coated with cooking spray; drizzle margarine over potato mixture.
  5. Sprinkle with paprika.
  6. Bake, uncovered, at 350F for 30 minutes.
