Mashed Potato Casserole
- 2 lb. baking potatoes, cut into 1-inch pieces
- 1 pkg. (8 oz.) non-fat process cream cheese
- 1 cup plain nonfat yogurt
- 1/2 tsp. garlic powder
- 1/4 tsp. salt
- Vegetable cooking spray
- 2 tbsp. reduced-calorie margarine, melted
- 1/2 tsp. paprika
- Place potato in a saucepan; add water to cover, and bring to a boil.
- Cover, reduce heat, and simmer 20 minutes or until very tender; drain.
- Combine potato, cream cheese, and next 3 ingredients in a bowl; beat at medium speed of an electric mixer 2 minutes or until smooth.
- Spoon into an 11x7x2-inch baking dish coated with cooking spray; drizzle margarine over potato mixture.
- Sprinkle with paprika.
- Bake, uncovered, at 350F for 30 minutes.
