Broccoli Puff Casserole
- 2 tablespoons butter or 2 tablespoons olive oil
- 1 small onion, chopped
- 14 cup celery, chopped
- 10 ounces broccoli, cooked and chopped
- 10 ounces cream of chicken soup
- 1 cup cheddar cheese, shredded
- 14 cup mayonnaise
- 2 eggs, beaten
- 0.5 (16 ounce) package seasoned stuffing mix, seasoned, tossed with melted butter or 0.5 (16 ounce) package croutons, seasoned
- Saute onion and celery in butter or oil until tender; about 10 minutes.
- Add broccoli, soup, cheese and mayonnaise; stir to blend.
- Fold in eggs.
- Turn into buttered baking dish and bake uncovered at 350 for 45 minutes..
- Put croutons or stuffing mix on top and bake for an additional 10 minutes.
- Let cool slightly before serving.
