Shredded Pork Tenderloin with Lime Sauce

  1. Sprinkle pork with salt and pepper.
  2. Heat oil in large nonstick skillet over high heat.
  3. Add pork and saute until almost cooked through, about 1 minute.
  4. Transfer to plate.
  5. Add 1 1/2 cups onions, bacon and jalapeno to same skillet and saute until onions are tender, about 5 minutes.
  6. Add wine; cook 1 minute.
  7. Add stock and cream and simmer until mixture is reduced to 1 cup, about 7 minutes.
  8. Return pork to skillet.
  9. Stir in lime juice.
  10. Add tomatoes and saute until pork is cooked through, about 1 minute longer.
  11. Transfer to serving dish.
  12. Sprinkle chopped green onions over and serve.
