Bread Pudding
- 2 eggs
- 2 cups skim milk
- 12 cup Splenda sugar substitute
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 14 teaspoon salt
- 2 cups bread cubes
- 14 cup raisins
- 14 cup dried apricot
- Whisk together eggs, milk, Splenda, cinnamon, vanilla and salt.
- Stir in bread cubes, raisins and apricots.
- Pour into a greased 8x2-inch round baking dish.
- Place in a 13x9-inch pan and place on oven rack.
- Pour hot water into larger pan until 1-inch depth.
- Bake at 350F for 45-50 minutes or until knife inserted halfway between edge and center comes out clean.
- Serve warm or chilled,.
