Chili Con Seitan

  1. Heat the oil in a large, heavy kettle.
  2. Add the onion and celery.
  3. Saute until almost tender.
  4. Add the garlic, green pepper, gluten, and spices.
  5. Saute for a few minutes more.
  6. Add the beans, cooking liquid, and tomatoes.
  7. Cover and simmer for about 10 minutes.
  8. Add tamari to taste.
  9. Serve with cornbread or tortillas and a big green salad.
