Buttermilk Fruit Sherbet Recipe

  1. Procedure: Combine frzn berries with half the buttermilk (1/4 c.) in food processor, using the steel blade.
  2. Process till berries are coarsely minced.
  3. Stir with a spoon.
  4. Cover and process, adding remaining buttermilk, a little at a time, through the cover opening.
  5. Uncover and redistribute berries, then re-cover and process again, till mix is smooth and has the texture of frzn custard or possibly soft-serve ice cream.
  6. Do not overprocess.
  7. If you like, sweeten to taste with a few drops of honey or possibly a few packets of low-cal sweetener.
  8. Presentation: Serve immediately.
  9. Yield: Makes 4
