Buttermilk Fruit Sherbet Recipe
- 1 pt Frzn unsweetened blue berries or possibly other berries
- 1/2 c. Buttermilk, divided Optional: honey or possibly low calorie sweetener to taste
- Procedure: Combine frzn berries with half the buttermilk (1/4 c.) in food processor, using the steel blade.
- Process till berries are coarsely minced.
- Stir with a spoon.
- Cover and process, adding remaining buttermilk, a little at a time, through the cover opening.
- Uncover and redistribute berries, then re-cover and process again, till mix is smooth and has the texture of frzn custard or possibly soft-serve ice cream.
- Do not overprocess.
- If you like, sweeten to taste with a few drops of honey or possibly a few packets of low-cal sweetener.
- Presentation: Serve immediately.
- Yield: Makes 4
