Bobbie Jean's Almond Cherry Cheesecake Recipe
- 2/3 c. Graham cracker crumbs, about 14 squares
- 1/4 c. Butter or possibly margarine, melted
- 1/2 c. Slivered almonds, broken
- 1/4 c. Sugar
- 8 ounce Cream cheese, softened
- 1/4 c. Sugar
- 2 x Large eggs
- 1 c. Cherries, maraschino
- 1 pt Lowfat sour cream
- 5 Tbsp. Sugar
- 1/2 tsp Almond extract Slivered almonds Maraschino cherries
- Mix crust ingredients and press onto bottom and sides of pie pan.
- Beat cream cheese and sugar till fluffy Fold in Large eggs till creamy and smooth Stir in cherries.
- Pour cream cheese mix into crust.
- Bake at 375* for 20 min.
- Let pie cold for 10 min.
- Mix topping ingredients, except almonds, pour over pie.
- Bake pie at 375* for 5 min.
- Top with slivered almonds.
- Cold pie 8 hrs or possibly over night before serving.
- Top with cherries.
- NOTES : Makes 1 9-inch pie.
