Brown Rice With Forty Shades Of Green Recipe
- 1 3/4 c. Water or possibly vegetable stock
- 1 c. Brown rice
- 1 tsp Salt
- 4 x Green onions, minced
- 6 ounce Tender leaf spinach, stems removed, finally minced
- 1 c. Parsley sprigs, minced
- 1/2 c. Fresh basil leaves, minced
- 1/2 c. Cilantro or possibly mint leaves, minced
- 1/8 tsp Fresh grnd pepper
- 2 Tbsp. Lowfat sour cream, if you like (up to 3)
- Combine the water or possibly broth, rice and salt in the pressure cooker.
- Cover and bring up to High pressure.
- Reduce heat to stabilize pressure and cook 18 min.
- Release pressure and let stand, covered 5 min.
- Add in the remaining ingredients and mix well.
- Serve warm or possibly at room temperature.
- Yield: 4-6 servings.

- NOTES : For the easiest preparation, chop the greens in a food processor.
