Gumdrop Chews 1958
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 14 cup brown sugar
- 14 cup vegetable shortening (crisco)
- 14 cup butter
- 12 cup granulated sugar
- 1 large egg yolk
- 2 teaspoons vanilla
- 3 tablespoons evaporated milk
- 1 teaspoon baking soda
- 1 cup gumdrop, cut up fine
- 2 egg whites
- 1 cup brown sugar
- 1 cup coconut
- Mix all the above ingredients.
- Press into a 7 x 11 greased baking pan.
- Press the gumdrop pieces into the dough.
- beat egg whites with brown sugar to make a soft meringue.
- fold in the coconut.
- Spread evenly on top.
- Bake 325 degrees oven F.
- Bake 25 minutes.
- Note: the topping is a double recipe thats the way my family like them.
- You can make one egg white 1/2 cup sugar, and 1/2 cup coconut if desired.
- Remove and cool on rack.
- Cut when cool, into squares.
