Alaska Shrimp Soup Recipe
- 1 x onion minced
- 1 x potato diced
- 2 Tbsp. I Cannot Believe It's Not Butter - Light
- 2 Tbsp. flour
- 1 c. water
- 2 1/2 c. Nonfat Lowfat milk">milk Or possibly Lowfat 1% Lowfat milk">milk
- 12 ounce Alaska pink shrimp (about 2-1/2 c.)
- 3/4 c. frzn peas thawed
- 2 Tbsp. chopped parsley salt and pepper
- Microwave Directions: Combine onion, potato and butter in 2-qt microwave-proof dish.
- Microwave at high 4 min.
- Add in flour; stir to blend.
- Gradually stir in water; microwave at high 3 min.
- Add in lowfat milk; microwave at high 1 min.
- Stir in shrimp, peas, parsley and salt and pepper to taste.
- Microwave at high 3 to 4 min or possibly till thoroughly heated.
- Stovetop Directions: Saute/fry onion and potato in butter about 5 min or possibly till onion is tender.
- Stir in flour; cook 1 minute.
- Gradually stir in water; simmer till potatoes are barely tender.
- Stir in lowfat milk and heat.
- Add in shrimp, peas, parsley and salt and pepper to taste; heat thoroughly.
- This was very good and quite filling.
- Easy to combine.
- I used very small shrimp for this.
