Cucumber, Tomato, Mint Salad

  1. In a large mixing bowl crumble goat cheese.
  2. Add tomatoes, cucumbers and onions to bowl.
  3. Cut mint leaves chiffonade-style into shreds and add to salad.
  4. Add vinegar and olive oil.
  5. Mix well.
  6. Add salt and pepper, to taste.
  7. Refrigerate for 1 hour, then serve.
