Bbq Shrimp Pie Recipe

  1. Process ingredients till blended.
  2. Taste for salt and sugar.
  3. Keep hot till ready to serve.
  4. BBQ SHRIMP:Brown small amount of butter in skillet, add in pepper, rosemary and shrimp; add in seasoning, and garlic; saute/fry over high heat till shrimp are pink.
  5. Add in Worcestershire, beer and stock; bring to a boil and allow liquid to reduce.
  6. Finish sauce by emulsifying butter into it.
  7. TO SERVE:Fill the tart shells with the hot sweet potato mix; arrange shrimp on top and then pour the sauce over and around the pie.
  8. Garnish with a sprig of fresh rosemary.
