Whole Wheat Banana Strawberry Crumb Muffins (With No Sugar!)

  1. Preheat oven to 350F.
  2. Grease 12 muffin tins or line with paper cups.
  3. In a large stand mixer or mixing bowl, beat together the bananas, sucanat, egg, oil and applesauce.
  4. Beat in the whole wheat flour, baking powder, baking soda and salt.
  5. Gently fold in 1 cup of mashed strawberries.
  6. In a small mixing bowl, add the whole wheat flour, cinnamon and sucanat for the topping.
  7. Cut in butter with fork or pastry blender.
  8. Pour the batter into the greased muffin tin and then divide the topping evenly.
  9. Bake in the preheated oven for 18 to 22 minutes, or until toothpick come out clean.
  10. Let cool slightly before serving.
  11. Serve warm with butter.
  12. Makes 12 muffins.
