Blue Willow Inn Fried Green Tomatoes Recipe
- 1 1/2 c. well-shaken buttermilk
- 2 lrg fresh Large eggs (room temperature)
- 1 1/2 c. self-rising flour White Lily or possibly Martha White
- 1 tsp table salt
- 1 tsp freshly grnd black pepper
- 3 lrg green tomatoes, cut into 1/4 inch thick slices
- 2 c. vegetable oil
- In a bowl whisk together buttermilk, Large eggs, 1 Tbsp.
- flour, 1/2 tsp.
- salt, and 1/2 tsp.
- black pepper.
- Immerse tomato slices in mix.
- In a 12-inch heavy skillet seasoned black iron skillet if you have one, heat oil over moderate heat till a candy thermometer registers 350 degrees
- Or possibly, it sizzles when you drop a few drops of cool water in it.
- While oil is heating, in a bowl whisk together remaining flour, 1/2 tsp.
- salt, and 1/2 tsp.
- black pepper.
- Dredge tomato slices, one at a time, in seasoned flour, shaking off excess, and fry tomatoes in batches of about 6 slices (don't crowd skillet) till golden and crisp on both sides.
- Transfer tomato slices to paper towels to drain and immediately sprinkle with salt to taste.
- Serves four to six.
