Blue Willow Inn Fried Green Tomatoes Recipe

  1. In a bowl whisk together buttermilk, Large eggs, 1 Tbsp.
  2. flour, 1/2 tsp.
  3. salt, and 1/2 tsp.
  4. black pepper.
  5. Immerse tomato slices in mix.
  6. In a 12-inch heavy skillet seasoned black iron skillet if you have one, heat oil over moderate heat till a candy thermometer registers 350 degrees
  7. Or possibly, it sizzles when you drop a few drops of cool water in it.
  8. While oil is heating, in a bowl whisk together remaining flour, 1/2 tsp.
  9. salt, and 1/2 tsp.
  10. black pepper.
  11. Dredge tomato slices, one at a time, in seasoned flour, shaking off excess, and fry tomatoes in batches of about 6 slices (don't crowd skillet) till golden and crisp on both sides.
  12. Transfer tomato slices to paper towels to drain and immediately sprinkle with salt to taste.
  13. Serves four to six.
