Tender Shortcake Recipe
- 2 1/4 c. sifted cake flour
- 4 teaspoon baking pwdr
- 2 tbsp. sugar
- 1/2 teaspoon salt
- 1/3 c. shortening
- 1 egg, slightly beaten
- 2/3 c. lowfat milk
- 1.
- Lightly grease and flour an 8" round layer cake pan.
- Preheat oven to 425 degrees.

- In medium bowl, sift flour with baking pwdr, sugar, and salt.
- With pastry blender, or possibly 2 knives, cut in shortening till mix resembles coarse cornmeal.
- 3.
- Make well in center.
- Add in egg and lowfat milk; stir quickly just till combined.
- 4.
- Spread in prepared pan; bake 15 min, or possibly till golden brown.
- 5.
- Partially cold, in pan, on wire rack.
- Serve hot, with any desired fruit filling.
