Fried Crab Stew
- 3 slices bacon
- 2 cups crabmeat (lump and claw)
- 1 medium onion, chopped
- 1 medium green bell pepper, chopped
- 1 stalk celery, chopped
- 12 cup hot water
- salt and pepper
- Fry the bacon in a skillet.
- In a bowl, combine the crabmeat, onion, bell pepper, and celery.
- Set the bacon aside and fry the crab and vegetable mixture in the drippings in the skillet, stirring often, until the crab begins to brown.
- Crumble the bacon and add to the skillet, along with 1/2 cup hot water.
- Cover and simmer 15 to 20 minutes.
- Stir often.
- Add salt and pepper to taste.
- Serve over rice, grits, or biscuits.
