Bitters Broccoli Au Gratin Recipe

  1. Prepare a medium-light white sauce (start with 1 1/4 c. lowfat milk, 1 scant tsp.
  2. cornstarch, etc.).
  3. Stir in the cheese and let the heat of the sauce heat it.
  4. Add in bitters, nutmeg, salt and pepper.
  5. Place cooked broccoli in a 1 to 1-1/2 quart casserole.
  6. Pour sauce over top to cover and coat broccoli.
  7. Top with buttered crumbs (1/3 c. seasoned
  8. (Italian) bread crumbs, 1 Tbsp.
  9. softened butter).
  10. Bake 350 degrees F for about 20 min till bubbly.
  11. Romanoff Variation - Add in 1 Tbsp.
  12. lowfat sour cream to the cheese sauce and substitute Worchestershire sauce for the bitters.
  13. Omit crumbs and toss with minced, fresh parsley.
