Irish potatoes
- 4 oz Philadelphia cream cheese block softened
- 1 stick butter softened
- 2 cup confectionery sugar
- 7 oz shredded coconut
- 1 tsp vanilla extract
- 1/4 cup cinnamon
- cream butter and cream cheese until smooth
- add vanilla and then sugar in small amounts blending in between with a hand mixer until smooth
- add the shredded coconut mix with a wooden spoon you even have to use your hands.
- at this point the dough is pretty sticky.
- roll into 1 inch balls
- pour cinnamon in a shallow bowl or dish and roll each ball in the cinnamon
- place in an air tight container then place in the refrigerator about an hour or so until they set.
