Irish potatoes

  1. cream butter and cream cheese until smooth
  2. add vanilla and then sugar in small amounts blending in between with a hand mixer until smooth
  3. add the shredded coconut mix with a wooden spoon you even have to use your hands.
  4. at this point the dough is pretty sticky.
  5. roll into 1 inch balls
  6. pour cinnamon in a shallow bowl or dish and roll each ball in the cinnamon
  7. place in an air tight container then place in the refrigerator about an hour or so until they set.
