Caprese Salad with Pesto alla Genovese

  1. Wash the tomatoes, pat dry and slice vertically.
  2. Wash the basil and pat dry.
  3. Slice the mozzarella cheese and place it between tomato slices with the basil leaves.
  4. Drizzle with balsamic vinegar.
  5. Put some pesto on the side (or pour over the salad).
  6. Serve with bread as an appetizer or light evening meal.
  7. I added avocado slices and tomato sauce.
  8. I omitted the balsamic vinegar and use lemon juice instead.
  9. This was what I had for dinner one night.
