Stew
- 450 g green capsicum, chopped
- 200 g onions, diced
- 250 chicken breasts, chopped
- 100 g ham, chopped
- 400 ml light coconut milk
- 600 g pumpkin, pureed
- 3 cups water
- 1 cup chicken stock
- 400 g tomatoes
- 250 g lentils
- 1 tablespoon curry paste
- 1 tablespoon oil
- 2 garlic cloves, diced
- Fry the capsicum, onion, garlic and ham with the oil and curry paste.
- Add the chicken and fry.
- Add the remaining ingredients and simmer for 20 minutes.
- Salt and pepper to taste.
