Pumpkin Oatmeal Muffins
- 34 cup white flour
- 34 cup whole wheat flour
- 1 cup quick-cooking oats
- 34 cup brown sugar
- 12 cup raisins
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 12 teaspoon nutmeg
- 14 teaspoon allspice
- 1 cup canned pumpkin
- 34 cup skim milk
- 13 cup canola oil
- 1 egg, lightly beaten
- Combine the dry ingredients in a large bowl (including raisins).
- Combine the wet ingredients in a separate bowl.
- Add the wet ingredients to the dry ingredients.
- Spray a muffin pan with non-stick spray and distribute batter evenly.
- Bake at 400 for about 20 minutes.
