Vickys Carrot & Coriander Fritters, Gluten, Dairy, Egg & Soy-Free

  1. Mix all of the ingredients together in a large mixing bowl.
  2. Use only as much oil and flour as you need for the patties to stick together well and try to use as little flour as possible
  3. Heat some oil in a pan over a medium heat.
  4. Form the carrot mixture into 6 patties.
  5. Squeeze any excess moisture out.
  6. Cook slowly, two at a time.
  7. Each batch should take 6-8 minutes to cook and should be golden brown and cooked through
  8. Nice served inside a pitta bread with salad and a dollop of plain yogurt or sour cream.
