Stuffed Pork LoinFresh Apricots Do the Trick Here.
- One 1-pound boneless pork loin roast, trimmed
- 3/4 to 1 cup chopped fresh apricots
- Salt and ground black pepper to taste
- Preheat the oven to 450 degrees.
- Stand the roast upright, and pierce down through the center with a knife.
- Make a second cut to form an X, then create a cavity in which the apricots can be stuffed by inserting and rotating the handle of a wooden spoon.
- Stuff with the apricots, and salt and pepper to taste.
- Roast the pork for 15 minutes.
- Reduce the oven temperature to 300 degrees, and roast for 15 to 20 minutes more or until the meat has reached an internal temperature of 150 degrees.
- Remove to a cutting board, and let sit for 3 to 5 minutes before slicing.
- Cut in 1/2-inch or 1-inch slices, as desired.
