Baked Zucchini - Reduced Fat

  1. Preheat oven to 400F
  2. Trim off ends of zucchini
  3. At every half inch along the zucchini, slice most of the way through the zucchini, but dont cut all the way down
  4. Dry the zucchini
  5. Place the zucchini on a piece of foil large enough to wrap the zucchini
  6. Apply the extra virgin olive oil to the zucchini
  7. Apply the garlic powder and onion powder
  8. Bake 25 minutes or until zucchini is soft when you poke it with a fork
  9. Take zucchini out and apply parmesan cheese
  10. Put back in the oven for 1 to 2 minutes to melt the cheese
