Scalloped Potatoes and Ham

  1. preheat oven to 350 degrees.
  2. melt butter in large pot (I use 8qt.
  3. size) over low heat.
  4. blend in flour, salt, pepper.
  5. cook until browned, stirring constantly.
  6. add milk slowly, stirring constantly, 1 minute.
  7. cook until thick and bubbling, stirring constantly.
  8. remove from heat.
  9. fold in ham, onion, green pepper, potatoes and cheese.
  10. pour into buttered 13x9x2 casserole dish.
  11. place on foil covered tray to prevent spills.
  12. bake for 30 minutes covered with foil.
  13. uncover and bake for 1 hour or until browned and bubbling.
  14. remove from heat and let stand for 10 minutes before serving.
