Buffalo Chicken Meatloaf
- 1- 1/2 pound Ground Chicken
- 1 cup Plain Dried Bread Crumbs
- 13 cups Gorgonzola Cheese
- 13 cups Celery, Diced (1/3 Cup Is About 1 Rib)
- 1/4 cups White Onion, Diced
- 1/2 cups Milk
- 1/2 cups Hot Sauce (Buffalo Style)
- 1 Large Egg
- 1/2 teaspoons Salt
- 1/4 teaspoons Garlic Powder
- 1/4 teaspoons Dried Parsley
- 1/4 teaspoons Dried Dill Weed
- 1 pinch Ground Black Pepper
- 3 Tablespoons Hot Sauce (Buffalo Style)
- 2 Tablespoons Crumbled Gorgonzola Cheese
- Preheat oven to 350 F. Spray a 9x5 or similar sized loaf pan with cooking spray and set aside.
- In a large bowl mix ground chicken, breadcrumbs, celery and onion.
- In a small bowl whisk milk, hot sauce, egg, salt, garlic powder, parsley, dill and pepper.
- Pour wet ingredients into chicken mixture and mix until combined.
- Place mixture into prepared loaf pan and firmly press.
- Brush the top with the remaining hot sauce and bake in preheated oven for 1 hour or until internal temperature reaches 165 F.
- Remove pan from oven.
- Sprinkle with additional Gorgonzola cheese then put pan back in the oven and continue to cook until cheese is melted, about 5 minutes.
- Remove from oven and let it sit for 10 minutes before serving.
