Northern Herring
- 600 g herring fillets
- 20 ml water
- 6 teaspoons salt
- 10 ml vinegar spice essence
- 20 ml water
- 2 teaspoons allspice
- 2 red onions
- 20 ml sugar
- Filets are rolled together with skinny side outwards.
- They are closely placed on the bottom of a saute pan Pour hard saltened water.
- Boil and let simmer for 15 minutes.
- This salty boil is removed.
- The whale oil taste that is often connected to herring is thus removed.
- Water, sugar, red onion and allspice is poured over the herrings.
- When herring is cool it is moved into refrigerator.
