Foolproof Soy-sauce Seasoned Eggs
- 10 Soft-boiled eggs
- 80 ml Soy sauce
- 120 ml Mirin
- 200 ml Sake
- 1 tsp Sugar
- Make the soft-boiled eggs.
- To learn how to make them, refer to.
- Put the sake and mirin into a pot and cook off the alcohol.
- Once the alcohol has evaporated, add the soy sauce.
- Right before it begins to boil, add the sugar and turn off the heat.
- Leave the pickling sauce to cool to room temperature.
- (If it's hot, the eggs will continue to cook.)
- Pour the sauce into a container and place the eggs in it.
- Leave in the refrigerator for a day and they're done!
