Tom Kha Gai

  1. Bring the coconut milk to a boil.
  2. Add lemon grass, galanga, and half of the lime leaves.
  3. Reduce heat and simmer for 10 minutes.
  4. Strain the stock to a clean pan.
  5. Return to heat and add chicken and mushrooms.
  6. Cook for 5 to 7 minutes, until the chicken is cooked.
  7. Stir in the lime juice, fish sauce and lime leaves.
  8. Season to taste.
  9. Serve hot.
  10. Garnish as desired.
