Aubergine Stuffed Crepes Recipe

  1. Saute/fry all the ingredients, except the crepes, in a large skillet over medium heat for 10 min.
  2. Divide the mix proportionately between the crepes.
  3. Roll up and serve warm.
  4. Top with Greek Tomato Sauce.
  5. Makes 24 crepes
