Gnocchi with Soy Bacon on Chard

  1. Bring large pot of lightly salted water to a boil over medium-high heat.
  2. Add gnocchi, and cook according to package directions, or until all gnocchi float to surface.
  3. Remove from heat, drain and set aside.
  4. Stack chard leaves on top of each other, roll up crosswise into loose bundle and slice thinly.
  5. Heat vegetable oil in large skillet over medium heat, and saute garlic 2 to 3 minutes.
  6. Add chard, and saute 2 minutes.
  7. Add wine, cover skillet and steam 3 to 4 minute, or until chard is tender but not limp.
  8. Remove chard from skillet, and place in serving dish.
  9. Spoon gnocchi on chard, and sprinkle with blue cheese and soy bacon bits.
  10. Add margarine to skillet, and heat over high heat.
  11. When melted, spoon margarine and any remaining pan juices over gnocchi, and serve.
