Michele's Chocolate Truffle Cheescake
- 1-1/2 cup sugar cookie crumbs
- 1/2 cup powdered sugar
- 1/2 cup cocoa powder
- 1/3 cup butter, melted
- 2 cups semi-sweet chocolate chips
- 3 pkg. (8 oz.) cream cheese (not low-fat)
- 1 can (14 oz.) Eagle Brand sweetened condensed milk
- 4 eggs
- 2 tsp. vanilla extract
- Crust: Mix well in medium bowl then press firmly on bottom of 9-inch springform pan.
- Set aside.
- Preheat oven to 300F.
- In heavy saucepan over low heat melt chips in one teaspoon melted butter, stirring constantly.
- Set aside.
- In large mixing bowl beat cream cheese until fluffy.
- Gradually beat in Eagle Brand milk until smooth.
- Blend in melted chocolate and eggs and vanilla.
- Pour into prepared crust.
- Bake for 1 hour and 5-10 minutes until center starts to firm.
- Cool for at least one hour, then refrigerate overnight.
