Satisfying Satay Chicken Lettuce Wraps
- 2 whole chicken breasts, seasoned with salt and pepper
- 3 tablespoons olive oil
- 2 tablespoons garlic, minced
- 14 lb fresh white mushroom, chopped fine
- 1 bunch green onion, thinly sliced
- 14 cup peanuts, chopped fine
- 1 large carrot, grated
- 12 inch gingerroot, grated (Or, substitute powdered ginger)
- 12 cup chicken broth
- 14 cup soy sauce
- 3 tablespoons peanut butter, creamy
- 18 teaspoon red pepper flakes, OPTIONAL. More if you like it spicy
- 2 romaine lettuce hearts, leaves separated
- Heat the olive oil and add the garlic to fuse flavors.
- Add chicken and brown in the oil.
- Season with sea salt and pepper.
- While the chicken is browning, use a food processor and chop mushrooms, add grated ginger.
- Once browned, toss the chicken into the food processor and chop fine.
- Return all ingredients to the pan.
- Toss and cook until flavors are blended.
- Wash and cut the ends off of the lettuce.
- Fill the lettuce leaves with the the mixture and enjoy!
