Italian Grilled Chicken
- Olive oil spray
- 4 boneless, skinless chicken breast halves (about 4 ounces each), all visible fat discarded
- 1 teaspoon dried oregano, crumbled
- 1 teaspoon olive oil
- 1 thinly sliced medium bell pepper, any color
- 1 thinly sliced medium onion
- 2 tablespoons shredded or grated Parmesan cheese
- Preheat the grill on medium high.
- Spray one side of the chicken with the olive oil spray.
- Sprinkle with half the oregano.
- Turn over.
- Repeat.
- Grill the chicken for 8 to 10 minutes, or until the chicken is no longer pink in the center, turning halfway through.
- Meanwhile, in a medium skillet, heat 1 teaspoon olive oil over medium-high heat, swirling to coat the bottom.
- Cook the bell pepper and onion for about 3 minutes, or until tender, stirring occasionally.
- Spoon over the cooked chicken.
- Sprinkle with the Parmesan.
