KimChi - Kim Chi

  1. Put cabbage in a bowl and sprinkle with salt.
  2. Leave overnight.
  3. Rinse under cold running water several times then drain and pat dry.
  4. Place in a large jar and stir in remaining ingredients.
  5. Cover with a heavy weight and leave for one week before using
