Just like Lou's Chicago deep dish pizza

  1. Proof yeast in water.
  2. Add sugar, and rest of the crust ingredients.
  3. Mix well and knead until well combined and elastic.
  4. Let dough rise 1 1/2 hours to 3 hours.
  5. Punch down dough.
  6. Dived into two.
  7. Pat each dough into rounds and press into preheated, well buttered cast iron pans.
  8. Sprinkle on toppings, in order given, with cheese on dough and tomatoes last.
  9. Sprinkle parmesan cheese on top of everything and bake on the bottom rack at 375 for 30 min.
  10. Let the pizzas rest for 5 min.
  11. Slice and serve.
  12. This tastes just like Lou Malnati's in Chicago!
  13. Light yet hearty and flavorful crust!
