Seriously Good Mac and Cheese Sauce
- 10 cups Cooked Macaroni
- 4 cups Half-and-half
- 2 Tablespoons Butter
- 2 Tablespoons Flour
- 1/4 teaspoons Onion Powder
- 18 teaspoons Cayenne Pepper
- 18 teaspoons Hot Mustard Powder (can Also Use 2 Tablespoons Prepared Yellow Mustard Instead)
- 1 pound Colby-Jack Cheese, Shredded
- 1 cup Sharp Cheddar Cheese, Shredded
- 1 Tablespoon Cornstarch
- 1 cup Queso Blanco Velveeta Cheese, Cubed
- 1 cup Panko Bread Crumbs
- 2 Tablespoons Melted Butter
- Cook macaroni according to directions.
- Butter a 9 x 13 casserole dish and put the macaroni in that.
- Heat half-and-half almost to boiling and set aside.
- Melt in a saucepan, add flour and stir together to make a roux.
- Add the hot half-and-half and whisk together until it has thickened.
- Add the spices, whisk together and then add the shredded cheeses and cornstarch.
- Stir together until melted and the sauce has thickened a little.
- Pour over the cooked macaroni and Velveeta cheese cubes.
- Mix together gently.
- Combine topping ingredients (panko and melted butter) and sprinkle buttered Panko bread crumbs on top.
- Bake in a 350 degrees F oven for 45 minutes or until nice and bubbly and hot.
- Take out and let stand for 10 minutes before serving.
- Serves about 8 people or 2 adults and 2 teenage boys.
