Seriously Good Mac and Cheese Sauce

  1. Cook macaroni according to directions.
  2. Butter a 9 x 13 casserole dish and put the macaroni in that.
  3. Heat half-and-half almost to boiling and set aside.
  4. Melt in a saucepan, add flour and stir together to make a roux.
  5. Add the hot half-and-half and whisk together until it has thickened.
  6. Add the spices, whisk together and then add the shredded cheeses and cornstarch.
  7. Stir together until melted and the sauce has thickened a little.
  8. Pour over the cooked macaroni and Velveeta cheese cubes.
  9. Mix together gently.
  10. Combine topping ingredients (panko and melted butter) and sprinkle buttered Panko bread crumbs on top.
  11. Bake in a 350 degrees F oven for 45 minutes or until nice and bubbly and hot.
  12. Take out and let stand for 10 minutes before serving.
  13. Serves about 8 people or 2 adults and 2 teenage boys.
