Peaches and Cream Crepes

  1. In a bowl, beat eggs until smooth.
  2. Whisk in oil and water.
  3. Slowly mix in pancake mix until fairly smooth.
  4. Let batter stand for 5 minutes while you heat frying pan over medium heat.
  5. Spray pan with cooking spray.
  6. Pour 1/8 cup batter into pan and tilt to coat the pan evenly.
  7. Cook 30-60 seconds until top appears dry.
  8. Flip and cook 30 seconds longer.
  9. Place frozen yogurt and peaches in center of crepes.
  10. Wrap crepes around filling and dust with powdered sugar.
