Peaches and Cream Crepes
- 3 eggs
- 2 tablespoons canola oil
- 1 cup water
- 34 cup pancake mix
- vanilla frozen yogurt
- 1 lb peach, peeled and diced
- powdered sugar
- In a bowl, beat eggs until smooth.
- Whisk in oil and water.
- Slowly mix in pancake mix until fairly smooth.
- Let batter stand for 5 minutes while you heat frying pan over medium heat.
- Spray pan with cooking spray.
- Pour 1/8 cup batter into pan and tilt to coat the pan evenly.
- Cook 30-60 seconds until top appears dry.
- Flip and cook 30 seconds longer.
- Place frozen yogurt and peaches in center of crepes.
- Wrap crepes around filling and dust with powdered sugar.
