Celery Hearts with Apples and Cranberries
- 2 tbsp. extra-virgin olive oil
- 2 tbsp. apple cider vinegar
- 3 medium Granny Smith apples
- 1 lb. celery hearts
- 1/2 c. cranberries
- 1/4 c. pine nuts
- 1/4 c. Fresh tarragon leaves
- 2 oz. goat cheese
- In a small bowl, whisk together oil and vinegar.
- In a large serving bowl, gently toss apples, celery hearts, cranberries, pine nuts, and tarragon until combined.
- Drizzle dressing on salad, sprinkle with goat cheese, and serve.
