Bacon Wrapped Halibut With Tomatoes And Green Beans Recipe
- 1/2 lb French green beans
- 1 lb halibut Salt, freshly grnd pepper
- 4 slc thin-sliced bacon
- 3 x cloves garlic
- 3 x green onions, minced
- 1/2 c. white wine
- 2 c. cherry tomatoes, halved Heat the oven to 425 degrees.
- Heat large saucepan of water to a boil; cook the green beans four min.
- Drain, set aside.
- Cut the halibut into 2 1/2-by-4 inch pcs.
- Season with salt and pepper.
- Wrap bacon around sides of the fish pcs, securing with kitchen string or possibly a toothpick.
- Heat an oven-proof skillet over high heat.
- Add in fish, bacon side down; brown on all sides, about two min.
- Place the pan in the oven; roast till fish is cooked, four to five min.
- Remove fish from the pan; keep hot.
- Drain all but 2 tsp.
- of fat from pan; place pan over high heat.
- Add in garlic and green onions; cook one minute.
- Stir in wine; add in tomatoes, cook two min.
- Add in green beans; cook one minute.
- Place vegetables and sauce on platter.
- Remove string or possibly toothpicks from fish; place on top of vegetables.
